The first mention of paratha was in a book called “Punjab Under the Sultans,” by Nijar. The Mughals also showed a great love for these Indian flatbreads.

However, the history of laccha paratha dates back to the 12th century in Punjab. Punjab is famous for its detectable culinary inventions in the Indian subcontinent. The name Laccha Paratha is derived from the word “laccha," which means ring. Since it is made up of layers of dough kept on top of one another, it looks like a ring.

The preparation is what makes it special. The dough is repeatedly folded over one another with the help of ghee and is fried on a Tawa with a spoonful of ghee. Some lacchas are also prepared in a tandoor and are called "Tandoori laccha paratha."

Although it contains simple components like wheat flour, salt, and ghee, the flavour is anything but simple. The rolling motion is where it all begins. All the techniques come together to create a gastronomic marvel that is both soft and crispy.
